Ingredients

1 cup rice

¾ to 1 cup jaggery (grated)

Instructions

Prepare the rice flour:

 

Wash the rice and soak it in water for about an hour.

Drain the water completely and spread the soaked rice on a cloth to air-dry for a few minutes, ensuring it’s free from excess moisture.

Once the rice is dry but still slightly damp, grind it into a fine powder using a mixer.

Mix with jaggery:

 

Grate the jaggery finely and mix it with the rice flour. If the rice flour is warm or moist, avoid blending the jaggery directly as it can make the mixture watery. Instead, mix the grated jaggery with the rice flour thoroughly using your hands or a spoon.

Form into balls:

 

Once well combined, shape the mixture into small balls or any desired shape to form Thambit.

These simple yet delicious Thambit treats are traditionally made for special occasions, offering a unique blend of jaggery sweetness and rice flour texture!
