Urad dal (black gram dal): 2 cup
Sesame seeds (til): ¼ cup
Pepper: 2 ladle (or around 2 tablespoon)
Dry Roast the Urad Dal:
In a pan, dry roast the urad dal over medium heat until it turns light golden and fragrant. Keep stirring to prevent burning.
Dry Roast the Sesame Seeds:
In the same pan, dry roast the sesame seeds. Be careful as sesame seeds tend to pop when roasted. Roast until they release a nutty aroma and start to turn slightly brown.
Dry Roast the Pepper:
Next, roast the pepper separately for 1-2 minutes until fragrant.
Grind Together:
Let all the roasted ingredients cool down.
Combine the urad dal, sesame seeds, and pepper, then grind to a fine or coarse powder, depending on your preference.
Store:
Store the Sesame Powder in an airtight container.

In dishes like Kootu and Chithranna
As a side dish with Idli/Dosa etc by mixing it with ghee or oil
