• VEGETABLE CURRY (GRAVY)

Pitla is yet another traditional Madhwa Dish and it is customary to cook this Gravy during Festivals along with kadi.

Ingredients

Urad Dal - 1 Tablespoon
Pepper - 1 Tablespoon
Red chillies - 6 Pcs
Coriander seeds - 1 Tablespoon
Asafoetida - Less than ¼ Teaspoon
Chana Dal - 1 Tablespoon
Coconut - ¼ Cup
Tur dal - 1 Tablespoon
Tamarind - Size of Big Lemon.
Mustard - 1 Teaspoon
Curry Leaves - 1 Strand
Salt -  As per taste

Vegetables that can be used

White Pumpkin, Raw Banana, Potato, Sweet Potato, Beans, Yam, Bitter gourd, Jackfruit Seeds, Ground Nut, Butter Beans

Instructions

  • In a pressure cooker, cook the tur dal with haldi. Smash and keep aside.
  • Pressure cook all the vegetables. Partially smash them and keep aside.
  • Soak the tamrind in water and take out the pulp.
  • Boil this tamrind water along with salt on a low flame.
  • Meanwhile, on a separate pan heat oil and fry the urad dal, pepper, red chiilis, coriander seeds, and asafoetida. Once fried, let it cool down then add them to a blender along with fresh coconut. Ground them to a smooth paste.
  • Add this ground paste to the boiling tamrind water.
  • Add the vegetables to the mixture and let it come to one boil.
  • Add the cooked tur dal and mix well. Add required amount of water to bring it to a thick gravy consistency.

For Seasoning:

  • Fry mustard seeds in oil till they splutter.
  • Add this to the gravy along with curry leaves.
