Urad dal (black gram dal): 1 cup (soaked for 1 to 2 hours)
Pepper: 1-2 teaspoons (adjust as per taste)
Salt: as required
Oil: for deep frying
Soak the Urad Dal:
Soak the urad dal for 1 to 2 hours in water. After soaking, drain the water.
Grind the Urad Dal:
In a mixer, grind the soaked urad dal to a smooth batter. Add only a little water if needed to get a thick, smooth consistency.
Add the pepper and salt to the batter, and mix well.
Shape the Vadas:
Apply some oil on a banana leaf or a ziplock cover to prevent sticking.
Take a small portion of the batter and shape it into a round vada. You can make a small hole in the center to get the traditional vada shape.
Deep Fry the Vadas:
Heat oil in a deep frying pan.
Once the oil is hot, gently slide the vadas into the oil and fry them on medium heat until they turn golden brown and crispy.
Serve:
Drain the vadas on a paper towel to remove excess oil.
Serve hot with coconut chutney or sambar.
