250 grams groundnuts (peanuts)
200 grams jaggery
½ cup water
Rice flour (for shaping, optional)
Roast the groundnuts:
Dry roast the groundnuts in a pan on medium heat until they turn golden and the skins start to crack.
Once roasted, let them cool. Rub the peanuts between your palms or on a plate to remove the husks. Set aside.
Prepare the jaggery syrup:
Crush the jaggery and add it to a pan with ½ cup water. Heat on medium until the jaggery dissolves.
Continue boiling until the syrup reaches a 2½ thread consistency. To test, drop a little syrup between your fingers and pull apart to see if two threads form.
Combine peanuts and syrup:
Once the syrup is ready, add the roasted groundnuts to the jaggery syrup and mix well.
Remove from the heat and either pour the mixture onto a greased plate to set or proceed to make laddus.
Shaping the laddus:
If making laddus, allow the mixture to cool slightly until it's safe to handle.
Apply a little rice flour to your hands to prevent sticking, and shape the mixture into round balls (laddus) of the desired size.
Alternative:
You can substitute roasted groundnuts with fried gram for a different variation of the laddu.
Once cooled, the Groundnut Laddus are ready to be served. These sweet and crunchy treats are great for snacking or festive occasions!
