Dhoodh Kheer / Milk Kheer
Milk: 2 to 5 cups (for 1 cup of rice)
Rice: 1 cup (coarsely ground)
Ghee: 1-2 tablespoons (for roasting the rice)
Sugar: As per taste (approximately 1-2 cups for 1 cup of rice)
Cardamom powder: A pinch (optional, for flavor)
Dry fruits: Cashews, almonds, or raisins (optional, for garnishing)
Roast the Rice:
Heat ghee in a pan and roast the coarsely ground rice until it turns light golden and fragrant. Set it aside.
Boil the Milk:
In a large pot, take the required amount of milk (4-5 cups for 1 cup of rice) and bring it to a boil over medium heat. Stir occasionally to avoid scorching.
Cook the Rice:
Once the milk starts boiling, add the ghee-roasted, coarsely ground rice to it.
Stir well and allow the rice to cook in the milk on a low flame, stirring frequently so that it doesn't stick to the bottom.
Add Sugar:
When the rice is soft and fully cooked, add sugar as per your taste (approximately 1-2 cups depending on your preference).
Stir well and let the sugar dissolve completely. Continue cooking for a few more minutes until the kheer thickens to the desired consistency.
Add Flavoring (Optional):
For extra flavor, you can add a pinch of cardamom powder at this stage.
Garnish and Serve:
Garnish with fried dry fruits (cashews, almonds, or raisins) if desired.
Serve the kheer warm or chilled, as per your preference.
