Coconut Rice
2 cups rice (cooked and cooled)
1/2 cup coconut scrapings
2/3 tablespoon chana dal
2 tablespoons urad dal
6 dry red chillies (adjust to taste)
2 tablespoons oil
1 teaspoon mustard seeds
A few curry leaves
A pinch of hing (asafoetida)
Salt to taste
Fry the dals and chillies: In a pan, heat a little oil. Add chana dal, urad dal, and dry red chillies. Fry until the dals turn golden. Let it cool and grind this to a coarse powder. Set aside.
Prepare the coconut mixture: In the same pan, add 2 tablespoons of oil. Once hot, add mustard seeds and let them splutter. Add curry leaves, followed by the coconut scrapings, and fry until the coconut turns light pink.
Combine: Add the ground dal and chilli powder to the coconut mixture. Mix well.
Final step: Add the cooked rice and salt, and mix everything together gently, ensuring the rice is coated well with the coconut mixture.
Serve: Serve hot with fried pappads.
