Appe Payasa / Appala Karadha Payasa
Rava (Semolina): 1 cup
Ghee: For mixing and frying (use generously for the best taste)
Water: Enough to make a dough
Milk: 4-5 cups (or more as needed)
Sugar: 1 ½ cups (or as per taste)
Cardamom powder: A pinch (optional)
Dry fruits: Cashews, almonds, or raisins (optional, for garnish)
Prepare the Rava Dough:
In a bowl, add 1 cup of rava and a little water along with some ghee. Mix it into a smooth dough.
Let the dough rest for an hour to allow the rava to absorb the moisture and soften.
Make Rava Puris:
After resting, take small portions of the dough and roll them out into small, thin circles like puris.
Heat ghee (or oil if preferred) in a pan and fry the rava puris until they turn golden and crisp.
Remove the fried puris from the ghee and let them cool slightly.
Break the Puris:
Once the puris are cool enough to handle, break them into small pieces.
Prepare the Milk Mixture:
In a separate pan, bring 4-5 cups of milk to a boil.
Add the broken rava puri pieces into the boiling milk and let them cook for a few minutes, stirring occasionally.
Add Sugar:
After the puris have softened and absorbed some of the milk, add 1 ½ cups of sugar (or as per your taste).
Stir well to dissolve the sugar and let the mixture simmer for a few more minutes, allowing the flavors to blend.
Adjust Consistency:
If the payasam thickens too much, you can add more milk to reach your desired consistency.
Flavor and Garnish:
Optionally, add a pinch of cardamom powder for extra flavor.
Garnish with fried dry fruits like cashews or raisins if you like.
Serve:
Serve the Rava Appala Payasam warm or chilled, as desired.
